Steamed Long Grain Rice

About the Recipe

This can be the base for any fried rice dish you may want to make with long grain rice. You can also serve this as plain steamed rice.

Ingredients

  • 1 ½ cups of long grain rice

  • 2.1 cups of cold water (17 ounces)

Ratio:  1.4 cups of water for 1 cup of rice


The easy way: 

The water level should be ¾ of an inch (2 cm) above the level of the rice, regardless of the quantity of rice.

  • Put the rice in a fine mesh strainer and rinse it well until the water come out clear..  While you are rinsing it, swish the rice around with your fingers continuously to scrub off excess starch.

  • Once you have completed the rinsing process, let the water drain from the rice for a minute or so.



 

Cooking

  • Put the rice in a small to medium sized pot and add the water.

  • Cover and bring to a boil over medium heat.



  • Remove from heat, reduce temperature to the lowest setting (minimum).

  • Stir the rice well and cover once again.

  • Wait one minute to allow your burner to cool and then return the pot to the burner.

  • Simmer covered and undisturbed for exactly 15 minutes. 

    • Do not take the lid off during the cooking process unless it starts to boil over.  If it does boil over, remove it from the heat and take the lid off for about 5 seconds, put the lid back on, check the temperature setting to make sure it is on minimum, wait 30 seconds and then return the pot to the burner.

  • Once the 15 minutes are up, remove from heat, remove the lid and loosen the rice with a fork.

  • Let the rice cool completely with the lid off the pot before using it in a fry.  However, it can also be served immediately as a plain, steamed rice.
