Chicken Parmesan

About the Recipe

Treat your guests to the wonderful flavor and presentation of Chicken Parmesan. It is a breeze to prepare and cooks quickly. Serve it with your favorite pasta and tomato sauce. Using the same basic procedure, you can also cut the chicken into strips to make chicken fingers.

Ingredients

  • 2 chicken breasts

  • 2 cups of Italian flavored bread crumbs



  • 3 large eggs

  • â…“ cup of all-purpose flour

  • 2 cups of sunflower or other cooking oil

  • Mozzarella cheese

  • Parmesan cheese

Preparing the Chicken


  • Begin by slicing your chicken breast in half to form 2 equal sized pieces.



  • Using a meat tenderizing hammer, pound each piece until it is about ¼ inch thick or less.

Breading the Chicken


  • In a medium sized bowl, combine 3 eggs and â…“ cup of all-purpose flour then whisk until smooth.

  • Put the breadcrumbs in a shallow pan to make it easier to bread the chicken breasts.




  • Completely immerse each piece of chicken in the egg mixture, let the excess batter drip off and then cover both sides with bread crumbs.





  • Set the breaded pieces aside on a tray or cookie sheet.




Note:  Using Italian flavored breadcrumbs is optional.  You can use regular bread crumbs seasoned with Mike's Season All. 



You can also make your own Italian flavored bread crumbs.





Frying the Chicken

  • Pour 2 cups of sunflower oil, or other cooking oil in a deep skillet and set the temperature to medium.

    • Add a small piece of breading to the oil to serve as a temperature gauge.  One the test piece has browned, the oil is sufficiently heated.




  • Once the oil has heated, fry each piece of chicken on both sides until they are golden brown.

    • They should not take long to cook, given the thinness of the chicken.  A couple of minutes on each side should suffice.

  • Set the cooked pieces aside on a baking pan.  Do not use parchment paper for broiling, as incorrectly depicted in the image below.

  • Put a bit of your favorite pasta sauce on each piece, along with a generous amount of mozzarella cheese.

  • Dust with a generous quantity of parmesan cheese.

  • Broil until the cheese melts and browns.  This should only take a couple of minutes.



  • Serve with pasta or gnocchi.
